These hot summer days have us wishing for a pool and some AC. Fortunately, there are other ways to stay cool like whipping up a refreshing Fennel Apple Cucumber juice and serving it over ice. We stumbled on this recipe from Food + Wine Magazine and thought it sounded like an interesting combination. We had never experimented with juicing fennel before, but the pairing of the bright fennel with the tart/sweet of the apple sounded magical. Our neighborhood is full of fruit trees and many are bursting with fruit, including some lovely Gravenstein apples, which we happily substituted for the Granny Smith in the original recipe. We couldn’t help but add some cucumber to the mix as well- we have been drinking cucumber infused water like it’s our job this summer. This proved to be a fabulous trio of flavors that, served over ice, was instantly cooling and refreshing, not to mention packed with Vitamin C!
This juice wouldn’t say no to a splash of gin or vodka, topped with some sparkling water either!
Refreshing Fennel - Apple - Cucumber Juice
Crisp and refreshing juice that is perfect for cooling down on hot summer days or using as a base for a cocktail.
- 1 fennel bulb , stalks & core removed
- 1 apple - gravenstein or other green variety
- 1/2 cucumber
Juice all ingredients, serve immediately over ice
Garnish with fennel fronds if you want to feel fancy!
