Coconut Date Milkshake - Two ways

 

We have been dealing with the heat in Portland this summer in various ways. The Pacific Northwest is nit known for its hot summers, but we have had many days of 90+ and are very very thankful for our AC.

Apart from the AC, we have been getting out and swimming, canoeing and boating whenever possible.

Finding recipes that don’t involve turning the stove or oven on has been a fun and delicious challenge, made easier by some fabulous cookbooks like My New Roots and Six Seasons by Joshua McFadden.

These two “milkshakes” are inspired by a recipe from My New Roots and make a perfectlately delectable evening dessert.

As will most of our recipes, the variations are endless!

Chocolate Coconut Date Milkshake

Simple, dairy free milkshake lightly sweetened with dates and cacao powder. 

Course Dessert, Drinks
Cuisine NW Seasonal, raw
Prep Time 10 minutes
Total Time 10 minutes
Servings 1 glass

Ingredients

  • 4-5 Dates
  • 4-5 Ice cubes
  • 1/2 cup coconut milk
  • 2 tsp cacao powder

Instructions

  1. Place dates in bowl and just cover with boiling water. Let soak for 5-10min. 

  2. Strain water from dates, place all ingredients in blender and blend until smooth.  

  3. Garnish with coconut flakes, cacao nibs or fruit, enjoy!

Maca & Cinnamon Coconut milkshake

Simple, dairy free milkshake flavored with dates, maca and cinnamon.

Prep Time 10 minutes
Total Time 10 minutes
Servings 1 glass

Ingredients

  • 4-5 Dates
  • 4-5 Ice cubes
  • 1/2 cup coconut milk
  • 1 tsp Maca powder
  • 1/4 tsp Cinnamon

Instructions

  1. Place dates in a bowl. Cover with boiling water, let sit. 

  2. Drain dates and place in blender with rest of ingredients. Blend until smooth. 

  3. Garnish with cinnamon, coconut flakes or fruit, enjoy!
